“Making sparkling wine in England isn’t anything new. English scientist Christopher Merret is actually credited as being the creator of the traditional sparkling wine method in 1662, before French monk Dom Perignon made it famous a few years later in Champagne. Although the English had a head start in the theory of sparkling wine, it has only been in the past 50 years that it has taken a great leap in quality. But since then it has jumped onto the world stage as the sparkling wine region to watch (so much so that several Champagne houses have now moved into the vineyards of England!)
