Gin may be typically associated with the UK, but there are now many producers around the world who are putting their own spin on things by creating exciting expressions that reflect their local heritage and provenance.
With a name that translates as The Beauty of the Seasons, Ki No Bi is a distinctly Japanese gin. Made in a small distillery in the ancient city of Kyoto, the gin uses a rice spirit as its base, which is flavoured with Japanese botanicals yellow yuzu, hinoki wood chips, bamboo, gyokuro tea and green sansh? berries, in addition to some more traditional gin botanicals. The botanicals are grouped into six flavour camps, which are individually distilled before being expertly blended.
Suggested serves: Wonderful in a dry Martini with a citrus twist. Swap the vermouth for sake to enjoy a fittingly Japanese Martini-style serve. The zesty character of Ki No Bi also perfectly suits a Clover Club cocktail, made with gin, vermouth, raspberry syrup, lemon juice and egg white.
Tasting Notes
A prominent citrus aroma of tangy yuzu a bit like a lemon-lime-grapefruit hybrid comes to the fore, with a background of smashed basil and white pepper. Bold flavours of lime, clove, spiced orange and rich oak follow, leaving a warm, tingling finish.
